Sizes and colours
A product's sizes are its variants: one button on the till, and the cashier picks the size, each with its own price — Sizes (variants) and extras (modifiers).
Stock per size
A variant has no stock of its own. When you need to know how many of each size you have, make one product per size («Shirt – M», «Shirt – L»), each linked to its own stock item and with its own barcode — the bulk add grid makes that quick. A size is then counted, received and reported on its own.
Returns and exchanges
An exchange is a return of the old size plus a new sale: the returns desk for a closed sale, then ring up the new size.
